Barbecue Freezer Meals Challenge – Day 3 – Southern BBQ Ribs | Make ahead rib recipe

Southern BBQ Ribs
1 lb (450 g) baby back ribs
2 Tbsp (30 mL) Epicure’s BBQ Chicken & Rib Rub
Preparation: Put ribs in freezer bag. Liberally shake Epicure BBQ Chicken & Rib Rub on both sides of ribs. Rub if desired. Freeze. Let thaw in fridge overnight before cooking.
1. Preheat oven to 300ºF (150ºC). Place a cooking rack on Epicure Sheet Pan and add 1 cup of water. Place ribs on top. Tightly cover ribs with foil and steam in oven for 1 ½ hours. Remove and drain off any liquid.
2. Preheat barbecue to medium-high.
3. Combine 1 Tbsp (30 mL) Epicure BBQ Chicken & Rib Rub with 2 Tbsp (30 mL) of oil and liberally brush both sides of ribs. Grill for 4-5 minutes per side.
Serving suggestion: Perfectly balance your plate – Serve with 2 C (500 mL) lightly steamed vegetables and 1 C (250 mL) grains.
Tip: To reduce steaming time, steam ribs in the microwave. Place coated ribs in Epicure’s Multipurpose Steamer and microwave on high, with lid on, for 8–10 minutes prior to grilling.
