Weber Grill Master, Damien Chong, walks you through how to cook pork ribs (side / back) on the grill.

Step 1: Preheat grill to 250F. Have on side with heat and one side without.
Step 2: Remove membrane off the ribs.
Step 3: Brush mustard on the ribs.
Step 4: Season ribs with dry rub.
Step 5: Place ribs on indirect heat (the side without direct heat).
Step 6: After 45 minutes, spray ribs with a mixture of apple cider vinegar and apple juice.
Step 7: Remove ribs from the grill at 165F internal. Apply more apple cider vinegar and apple juice. Then brush both sides of the ribs with BBQ sauce.
Step 8: Wrap ribs with butcher paper or tin foil. Put them back on the 250F grill over indirect heat until an internal temperature of 203F-205F is reached. About 2 hours.
Step 9: Remove wrapped ribs from the grill, put them in a closed cooler to rest for about 30-45 minutes.
Step 10: Remove ribs from cooler, unwrap, slice, and enjoy.
