SAVORY SLOW-COOKED PORK RIBS BBQ #AdobongBaboy

SAVORY SLOW-COOKED PORK RIBS BBQ (ADOBO RIBS)

INGREDIENTS

1 slab of pork ribs, washed and cut to desired size
1 cup water
1/3 cup apple cider vinegar
12 oz. 100% pineapple juice
2 tbsp. soy sauce
1/4 cup brown sugar
salt to taste
2 tsp. coarse ground pepper
1 head or knob of garlic
1 medium onion
2-3 bay leaves

Dunk the ribs in boiling water and let simmer for 10 minutes. While the meat is simmering, prepare the onion and the garlic by roasting them in open fire. I like the garlic and onion skin a little burnt to bring out their pungent flavor. Let cool before peeling/slicing. Transfer the meat to a dutch oven (I have a cast iron dutch oven skillet) and add all the ingredients. Bring it to rolling boil and turn heat down to low and let simmer until meat is tender. Check to make sure that there is still enough liquid after an hour or so of simmering. You may add a cup more of water if you like and you may also want to adjust the taste to your liking. I added a little bit of salt on this one to balance the sweetness of the brown sugar. We like to drizzle some of the sauce/liquid on top of the rice so I always make sure there is enough liquid before I turn the heat off.
