[Music]hey everybody welcome to Rivera’sbarbecue a taste of Texas today we’regoing to talk about barbecue sauce youknow today we’re going to in this videowhere I learn what I call a simple Texasred sauce yeah I know a lot of peopledebate sauce yeah some people say ifyour barbecue is good enough you don’tneed salt I guess what they’re rightthen you have people on the other sidethey go I like the way to situate tomeet there right I’m somewhere in themiddle I like some meats with tongs Ilike some meats without sauce but todaywe’re gonna show you on a simple Texasred so when you’re putting on thatbackyard barbecue and you make thisbarbecue sauce from scratchguaranteed to impress your friends sostick around okay guys as you can seehere I have all the ingredients for ourTexas red sauce you know we got a cupand a half of ketchup 1/4 cup of whitevinegar 1/4 cup of apple cider vinegargot a quarter cup of brown sugargot a 10 spoon and a half of coarseblack pepper tablespoon and a half ofkosher saltI also have a tablespoon of each ofchili powder granulated garlic andcumino I also have some Worcestershiresauce that I’m gonna add to this saucealso having this boat I have acombination of onions and peppers thatI’m going to use the sauteed to beginour sauce so I’m gonna go right to thatand show you guys how we do this sauceok everybody we’re gonna start we knowI’ve already preheated my pot to amedium heat so I’m gonna start sauteingour onions and peppers just untilthey’re translucent that way I can startlayering and the flavors for thisbarbecue sauce now we’re gonna put inour onions peppers Lonestar saltine Isaid well what you want to hear rightthere man you know that pot is good andhot well shouldn’t take long for theseto get translucent for about 3 to 5minutes and we’ll go from therenow I see starts I’ll tell you guys whatI’m gonna do is I’m going to add alittle SPG so it’s a little salt peppergarlicI’ve already got it mixed up you know soI’m gonna start sweating these downyou know you want to peel flavors as yougoso right now you know we’re buildingthere we’ll get these things sweatingdown then we’ll start adding all ourliquid ingredients and actually turnthis into a great sauce as you can seeguys got a decent sautee going beenroughly sauteing now for a couple ofminutes we’re gonna go ahead and startadding our liquid ingredients to startbuilding this saucefirst we’re gonna start by adding in ourkind of a half a ketchupyou know then I’m going to add in youknow both my vinegars first I’m gonna gointo my apple cider they’re gonna followup with white vinegar I’m gonna go aheadand give this a quick stir with ourwhisk here’s what we started corporalthis rate this together you know shortlyat the end we’ll actually blend all thisup so I can get all the chunks of theonions all that incorporated real wellso we can have that that flavorthroughout we’ve got that stirred inpretty good I don’t let this go for acouple minutes and then I’m gonna addthe rest of our ingredients in okay whatI’m gonna do next is I’m gonna go aheadand incorporate our brown sugar all therest of our dry ingredients yeah chilipowder to the cumin on the garlic I’mgonna go ahead and turn this down alittle bit so don’t sweat on me our saltand then for me I want to use a coupledashes of Worcestershire saucenow we’re gonna stir all this togetherlet it cook down let all these flavorsstart to slowly come together actuallylimit the fire down to kind of a mediumlow so I’m gonna cook this down let thesugar dissolve what all the flavors meldtogether and then after this we will putit in the blender okay guys we’re alsogoing to add a quarter cup of water inhere just to thin it out just a littlebit I don’t like it super super thicksauce Plus this also help the sugardissolve a little better you’re goinggive us a strongas you can see we’re cooking the saltdown starting to get really dark youknow that’s gonna be in effect from thechili powder it smells greatyou know I just meld my hands to thekindling chemicals and we’ll smoke thisit’ll be really great saucehey guys off-camera took a sauce out ofthe pot put it in the blendernow y’all need one to hear that blendedit up to it’s menow we’re gonna put it back in the potand just finish it to make sure all thesugars and everything dissolve and pourthis right back over there man thislooks and smells terrificit’s nice silky velvety okay guys I’lltransfer at the BBQ sauce and then fromthe pot back into into a glass bowlas you can see turned out really reallygood you can see the hints of peppereverything in it gonna give this stuff aquick tastehey guys our Texas red sauce turned outreally well the smokiness of the cuminyou know the forward taste of the pepperon your palate is awesome and I meanthis is gonna pair well with anythingbrisket pork beef ribs pork ribsanything you can throw in a smokerthis is gonna taste good on you knowit’s gonna accentuate the flavors onyour meat not overpowering and that’swhat I like you know I’m gonna go aheadbottle this up you could use it now ifyou need it to you but I’m gonna bottleit up stick it in the fridge you knowbecause I got a cookout here in about 48hours you know the longer the flavorsmarry the better the better it’s gonnabe so just let you know a couple thingsthat are coming up you know next weekwe’re going to be doing a
