How To Make Kansas City BBQ Ribs

We start with two racks of St Louis Ribs. These are Spare ribs that are trimmed down with the rib tips removed. This is typically what you would be served in Kansas City and they are always finished with a sweet and sticky, tomato bbq sauce.

This is easy to do… just peel off the membrane on the back of the ribs, lightly coat them in yellow mustard and then cover them evenly with the homemade Kansas City BBQ rub.

I used my Pit Boss vertical smoker for this cook but you can use your oven or any kind of smoker.
Set the temperature to 275 degrees F and cook the ribs meat side up for two hours (spritzing with apple juice every 30 minutes).

After two hours place the St Louis Ribs meat side down on top of a few pads of butter and wrap tightly in aluminum foil. Continue to cook them at 275 until they are very tender (this usually happens around 200 degrees F).

When they are tender, apply the Kansas City Style BBQ Sauce and put them back in the oven or smoker for 5 minutes.

Remove from the smoker, slice, and serve.

Kansas City BBQ Rub Ingredients:
3 Tablespoons Dark Brown Sugar
3 Tablespoons Paprika
1 Tablespoon Salt
1 Tablespoon Pepper
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon Chili Powder
1 Teaspoon Cayenne Pepper

Kansas City BBQ Sauce Ingredients
2 Cups Ketchup
5 oz A1 Sauce
5 oz Heinz 57 Sauce
3/4 cup Apple Juice
1/3 cup Worcestershire Sauce
1/3 cup Dark Corn Syrup
1/3 cup Honey
1/4 cup Molasses
1/2 Teaspoon Liquid Smoke
1 Tablespoon Black Pepper
1 Teaspoon Garlic Powder
2 Tablespoon Yellow Mustard (optional)
