SAUCE INGREDIENTS | Yield: About 20 Ounces

2 Tbsp Vegetable Oil
¼ Cup Onion, Finley Minced
6 Cloves Garlic, Finely Minced
1 Tbsp Pimento Peppers, Finley Minced
1 Tbsp Green Seasoning
¼ Cup Fresh Pineapple, Finely Minced
1½ Cup Ketchup
¼ Cup Honey
¼ Cup Brown Sugar
½ Cup Pineapple Juice
½ Tsp Geera Powder (Cumin)
½ Tsp Chili Powder
½ Tsp Paprika Powder
2 Tbsp Molasses
1 Tbsp Apple Cider Vinegar
2 Tsp Fresh Chadon Beni, minced (Culantro)
Salt and Black Pepper to taste

METHOD

1. Place a medium heavy bottomed sauce pan over high heat. Add the vegetable oil and place in the onion, garlic and pimentos to sauté for 2 minutes until fragrant then place in the green seasoning and continuing sautéing for 20 seconds.
2. Add in the minced fresh pineapple, cook for 1 minute then add in the ketchup, honey, brown sugar and pineapple juice. Stir well to incorporate then mix in cumin, chili and paprika powders.
3. Add the molasses and vinegar and cook gently on low to medium heat for 6-8 minutes covered, stirring once or twice during the duration.
4. Remove cover, drizzle in the chadon beni and stir. Taste and adjust with salt and pepper to your liking.
5. Remove sauce from the heat and use to Barbecue Chicken, Pork, Seafood and even Lamb. Enjoy.

CHICKEN INGREDIENTS

1 Whole Chicken (About 4 Lbs)
1 Tsp Salt
¾ Tsp Black Pepper
½ Tsp Cinnamon Powder
½ Tsp Garlic Powder
¼ Cup Green Seasoning
8 oz Pineapple Barbecue Sauce

METHOD

1. Place your washed and cleaned chicken on a clean cutting board. Cut into quarters by producing two leg and thighs and two breast and wings portions.
2. In small bowl, add the salt, black pepper, cinnamon and garlic powders in and mix to combine. Sprinkle liberally over the chicken pieces to season well while rubbing into the cavities, beneath the skin and on the surface area. You may or may not need to use all the spice mix.
3. Place chicken pieces into a bowl and add the green seasoning and continue rubbing all over.
4. Cover and let marinate in chiller for 3 hours or a minimum of one hour.
5. Preheat oven to 375 degrees Fahrenheit.
6. Line a medium baking tray with foil and place a baking rack or cooling rack atop.
7. Position the chicken quarters on the baking rack and place into the oven for 35 minutes.
8. After this cooking period, remove tray from the oven and brush the chicken pieces with bar b que sauce liberally on both sides. Return to the oven and bake for another 12 minutes, then remove and baste again with sauce and return to oven to bake again for same time interval. Continue this process once or twice again turning the chicken to develop that caramelized brown color on both sides and until it is cooked all through.
9. When cooked, let chicken rest for 5 minutes before cutting or serving to allow juices to settle and redistribute. This will yield a moist and succulent chicken when served to your guests.
10. Serve Oven Barbecue Chicken with potato salad, fried rice or even with a macaroni pie.

intosupermarket we just buy barbecue sauceand you know pretty much barbecue athome on the grill I’m gonna show youguys how to make it at home it’s deadsimple just sit standard aromatics athome and ingredients that we have solet’s get started we have some choppedonions garlic and pimentos again ourlocal aromatics why not put them insidehere we start soups stews graviescurries apparently condiments no sowe’re gonna get that nice sugar circlemost of the garlic and onions andtomatoes inside if it’s gonna addcarrots and make our sauce more complexthis is not any bottled stuff peopleyou’re gonna ensure that when peoplecome and eat tasty barbecues at home youlike something special nobody gonna addit some chopped pineapple freshpineapple it’s a then I actually have afriend from up there he’s a farmer I’vealways brings our pineapples every timehe comes and checks me I’m reallytopping all its quality stuff yeahalways buywell guys support our own increasing theheap too high right now there’s morevolume in our pot the sweetness of thepineapple is gonna break down it’s gonnaget complex and really add to thatflavor or a pineapple flavor that boldflavor that we want in this barbecuesauce we want to let that go for abouttwo minutes so we have our threecomponents inside there let’s add ourTotti bold flavors of the ketchupketchup is a foundation in barbecuesauce ladies and gents you need it thatnice rich tomato flavor and boldness iswhat we’re gonna caramelize our chickenor meat or seafood or whatever you arebarbecuing so that goes in inside therecomes the combination okay we’re gonnaadd some honey to sweeten it up you knowwhat I’m talking aboutand you know you’re not a scriptablefilmmaker see yeah I tried but we have ateaspoon of soy that we don’t waste anyexpensive these days you know honeyespecially Bob brandy honey your soupand sold on the streets especially onthe road the main roads I check it out alot of our farmers up there who areproud of their one honey so which is thebottle from them we’re gonna go withbarbecue and retail Bobby this time youcan use sauce ready your match answersome pineapple juice inside a also sonot only the fruit we use them use anyjuice inside there that’s gonna add tothe viscosity and the the liquid form orfactor of the shore so you have somelittle spreadability got it all right alittle bit of cumin inside there forboth flavors people think that cumin orG renders nature pretty much as justbecause he Tunes which is very good insources a lot of our times we do rubsespecially for meats cumin or jeera is abig flavor element green seasoning youput that inside it for me so the greenseasoning the celery decide the shadowvenue all that great stuff inside it’spulverized so you’re gonna get a littlebit Caribbean essence does it does it doa little bit of chili powder so you gota bit of the heatpaprika and barbecue sauce stood onEmma’s smokiness exactly immediately asyou could see already starting todevelop a viscosity yeah so you knowit’s gonna have nice ability to cling tothe meat very important your honor loosebarbecue sauce in a washer a nice onewith carrots and boots now the team aregonna deal with your purchase okay allright she kept up well as molasses youwant to scoop that out that’s sureso molasses is going to give it depthmolasses that pretty popular ingredientthat we make to them which also has thisgreat molasses aspect in terms of thatwrongthick deep crude color that is going toadd to the texture of this exactly whatkind of molasses all already play so alittle bit of tartness so we need alittle bit of apple cider you could usehomemade not well made but more or lessthey are we home so white vinegar yeahthere’s still vinegar correct yesthere you go inside there so we got ourtop that’s going on so we want to mixthat up together typically now as youbring all the ingredients get our we’regoing to cover it and let it go forabout six to eight minutes on mediumpeople just allow everything to cometogether and meld so let’s cover it downokay okay so six minutes has gone byhere it almost looks like it has thissort of nice smells good yeah so whatI’d know is a little bit of shadow Beniinside there okay and always addingherbs at the end so we get that nicevibrant flavor coming through nice punchwe didn’t have any black pepper and saltin this could you add some for me pleaseso and then I want to taste it okaywhat I like about is that the onions andthe garlic and the pimentos out of themuscles you could still see the texturefit inside there so it’s a
