INGREDIENTS

CHICKEN MARINADE

1 Kg, Chicken Wings
2 tbsp, Refined oil Canola Oil
2 tsp, Salt
2 tsp, Crushed Black Pepper
1 tsp, Smoked Paprika
1.5 tsp, Garlic powder
1.5 tsp, Ginger Powder

SAUCE FOR GLAZING

1 cup, Tomato Ketchup
2 tbsp, Chilli powder
1 tsp, Hot red chilli sauce
1/4 cup, White Vinegar
1/2 cup, Brown Sugar
2 tsp, Garlic powder
2 tsp, Onion powder
2 tsp, Instant Coffee Powder
2 tsp Barbecue sauce
Salt and Pepper to taste

METHOD

Preheat oven to 350-360 F on a Domestic Convection Bake.

Mix wingettes and Drummettes together in a large bowl with all ingredients for marination (oil, salt and pepper, smoked paprika) until all pieces are evenly coated.

Line a baking tray with baking paper and arrange wingettes and drummettes ensuring not to crowd the tray.

Bake pieces for 40 minutes, turning once halfway through baking to ensure the wingettes and drummettes get browned on all sides.

Combine all ingredients for barbecue sauce in a small saucepan and cook for 2-3 minutes on simmer heat by stirring consistently, until a rich dark sauce forms and turn the flame off and keep it aside.

Glaze pieces with sauce and coat both sides for even taste.

Bake for an additional 5 minutes or until the wings have slightly darkened and begun to crackle.

Remove wings from the baking tray, serve it hot on a platter, and serve alongside the dipping sauce.
